Basically in order to have them closer together than the depth of the pool, you would lower the footing below grade (probably a stemwall) until that angle of repose is below the pool.
Also, as an alternate you can always beef up the pool wall to handle the extra surcharge due to the house weight
It is possible to build closer than pool depth +1’, but its all dependent on the soil and the applied loads from the house…. Obviously the closer you get the more careful you have to be before you have to shore it up during construction. The 45degree angle of response is a good general rule of thumb for most soils and is a safe assumption but in reality a compact soil under load has a smaller angle down to 30degrees in some cases which will allow you to get a bit closer.
Another option that comes to mind right now is to underpin the foundation with helical piles and then you could really get close…..
